Oops! I dropped the lemon tart

A lemon tart plated as it landed when one broke in the kitchen. Bottura served the accident on purpose, and imperfection became something a three-star kitchen could mean rather than hide.
Why it works
A broken shell has more edges than a cut slice, so every spoonful takes crust, curd and cream at once — which an intact tart cannot do.
