Chocolate mousse and meringue under a canopy of chocolate shavings. Lenôtre worked out how to make pastry of this standard in quantity and send it out, which is why the rest of France could suddenly buy it.
Why it works
Meringue gives the crack, mousse gives the melt, and the shavings are the first resistance the spoon meets — the order of textures is the recipe.
