What it is
The word means both the blend and the wild hyssop in it, which is protected in parts of the Levant because over-picking nearly wiped it out. Sumac gives the sourness, toasted sesame the body — a blend that is as much texture as flavour.
In the kitchen
Mix it with olive oil into a paste before spreading on bread. Dry on the surface it just falls off.
