What it is
Nomads discovered it by accident: milk carried in animal-skin bags fermented on horseback into something tart that kept. Centuries later, a scientist studying Bulgarian villages full of centenarians credited their yogurt — and Europe has eaten it for breakfast ever since.
In the kitchen
To cook with it without curdling, temper it: whisk a little hot liquid into the yogurt before the yogurt goes into the pot.
