What it is
Four or five alpage families still make it, between June and September, to something like a hundred wheels a summer. Nothing is inoculated: the moulds arrive on their own, carried in on the pasture plants of the Vanoise, so the veining is patchy and no two wheels are alike.
In the kitchen
Look at the cut before you buy: a wheel that has barely blued is not a failure, it is that summer. Serve it as it comes, with bread — cooking flattens the herbal note you paid for.
