What it is
A beet sugar, not a cane one — which is what separates it from cassonade and why the north of France insists on it. Speculoos, tarte au sucre and gaufres de Lille are all built on vergeoise brune and taste wrong without it.
In the kitchen
Blonde and brune are not interchangeable. Brune is caramelised twice and carries most of the flavour.
