What it is
Tosaka means cockscomb, which is the shape exactly: flat branching combs growing on rock in warm Japanese water. The red is the alga's own colour; the green and the white sold beside it are the same seaweed with the red pigment stripped out, not different species.
In the kitchen
It arrives packed in salt. Rinse, then soak ten minutes in cold water with one change — long enough to lose the salt, short enough to keep the crunch, which never comes back once it has gone limp.
