What it is
When Japan’s nori harvests mysteriously collapsed after the war, it was a British scientist, Kathleen Mary Drew-Baker, whose research on seaweed life cycles saved the crop — she never visited Japan, yet fishermen there still honour her each April as the “Mother of the Sea”.
In the kitchen
Wave a sheet over a flame until it turns emerald and crisps. Crumbled into butter or over eggs, it adds the sea without the fish.
