What it is
Not brains, as the nervous suppose, but the thymus gland — an organ that shrinks away as the animal grows, so only young calves can offer it. Haute cuisine’s badge of nerve and technique: soaked, blanched, pressed, then seared to a gilded crust over a custard heart.
In the kitchen
The pressing overnight under a weight is not optional — it firms the lobe so it sears instead of steaming. Then: brown butter, capers or morels, and conviction.
