What it is
English legend claims a king was so delighted by a loin of beef that he knighted it on the spot: “Arise, Sir Loin.” The story is too good to be true and too good to die — much like a well-aged côte de bœuf.
In the kitchen
Take it out of the fridge an hour ahead, sear it hard, rest it as long as you cooked it. The resting is not optional; it is half the recipe.
