What it is

Named for a seaside town in Thailand, though the version most of the world knows was made in California by a Vietnamese refugee, David Tran, who named his company after the freighter that carried him out. The rooster on the bottle is his zodiac sign.

In the kitchen

It is as much vinegar and sugar as chilli, so it works as a glaze. Brush it on in the last minutes of roasting.
