What it is
A different species from the bulb onion — it never swells and never means to. Cultivated in China for two thousand years, it is one of the few alliums used raw at the finish of a dish rather than cooked down at the start.
In the kitchen
White and green are two ingredients. Cook the white with the aromatics, scatter the green raw over the finished plate.
