What it is
Tokyo soba shops rarely build a dipping broth on bonito alone — the kaeshi, dark with soy and sugar, swallows it. Mackerel dried into a bushi gives an oily, faintly bitter stock with enough weight to answer back, usually blended with round-herring and frigate-tuna shavings.
In the kitchen
Use thick shavings and a long, gentle steep — ten minutes around 85°C. Boiled hard the oil emulsifies: the broth clouds and turns frankly fishy, which is why it stays out of clear soups.
