What it is
Far gentler than any European vinegar — around half the acidity — which is why sushi rice can be seasoned with it heavily without becoming sharp. Japan has made it since rice wine has existed, which is a very long time.
In the kitchen
Check whether it is seasoned. Sushi vinegar already contains sugar and salt, and using it as plain vinegar wrecks a dressing.
