What it is
The cloudy strand that forms in an unfiltered bottle is the mother — a living mat of bacteria and cellulose that turns alcohol into acid. It is not spoilage, and it can be lifted out and used to start the next batch.
In the kitchen
It is gentler than wine vinegar, so use a little more. It suits pork, cabbage and anything with apple in it.
