What it is
The Israelites in Exodus are fed on quail driven in by the wind, which matches the real thing — migrating quail cross the Mediterranean in exhausted flocks and drop on the far shore in numbers. Egypt has netted them that way for millennia.
In the kitchen
Spatchcock it and cook it fast and hot. A whole quail roasted slowly is dry breast and raw thigh at the same moment.
