What it is
Three ingredients are permitted: Italian pork, sea salt, and the air of San Daniele, where alpine cold meets Adriatic damp. The trotter stays on and the leg is pressed flat for a day or two, which gives it the guitar silhouette and lets the salt reach the centre without the ham being salted harder.
In the kitchen
Cut it thicker than a Parma — the flesh is moister and a veil-thin slice tears on the board. Take it off the fridge shelf thirty minutes ahead, and never dress it with anything acidic.
