What it is
The Lucques is hand-picked green in late September and October and sold within weeks as olives nouvelles, under an appellation covering the Hérault and the Aude. Its crescent comes from the fruit's own shape, and the flesh is soft enough to leave the stone whole: it is never cracked before curing.
In the kitchen
Serve them cold and plain with bread and nothing else; the flesh is nearer avocado than brine olive, and any assertive dressing buries it. They keep only weeks, so buy in small quantity.
