What it is
Once it grew on ten tiny islands and nowhere else on Earth. In 1667 the Dutch traded Manhattan to the English to keep Run, a nutmeg island two miles long — history’s verdict on that swap is still funny.
In the kitchen
Buy it whole, grate it directly over the dish, and stop earlier than you think: three passes of the grater season a whole béchamel.
