What it is
Called black cumin, black caraway and black onion seed, and it is none of the three — it belongs to the buttercup family. It is the black seed of Islamic and Ayurvedic medicine, and it is what speckles the top of a naan.
In the kitchen
Scatter it on bread before baking, or bloom it in hot oil. Ground, it turns dusty and loses the oniony top note.
