What it is
Texts from 1035 already name it, which makes it the oldest cheese in Normandy, though the heart came much later — legend has it that local girls shaped them for English soldiers during the Hundred Years' War. Before that it was sold as a brick or a cylinder, and both shapes are still made.
In the kitchen
It is a lactic set, not a Camembert: it stays granular and salty and will never run. Serve it cool with cider or an apple, and stop waiting for a bulge that is not coming.
