What it is
Irish monks settled the Vosges valleys in the seventh century and built a monasterium — the word wore down to Munster, and so did the cheese made there. Its orange coat is not mould but bacteria, washed on by hand every two days.
In the kitchen
Alsace eats it with a saucer of cumin seed alongside, not mixed in. The seed cuts the barnyard and the two arrive together.
