What it is
Muscat of Alexandria is among the oldest grapes still farmed, and in Andalusia its wine is sweet enough that vinegar made from it keeps a residue of sugar the acetobacter never reaches. The sherry vinegar rules give it a category of its own, aged in the same soleras as the rest.
In the kitchen
It carries sugar, so it glazes: reduce it by half in the pan after searing foie gras or duck and it naps on its own. In a vinaigrette use less oil than usual — three to one is plenty.
