What it is
Oregano's gentler sister — the same genus, but sweeter and more floral where oregano is peppery and blunt. Greeks planted it on graves for a peaceful sleep, and the Romans made wedding crowns from it.
In the kitchen
Add it at the end, never at the start. Unlike oregano it is fragile and long cooking flattens it completely.
