What it is
Made from soured ale rather than wine, in a country that never had vineyards to spare. It is the one vinegar built for fried food — the malt sweetness stands up to hot fat where a wine vinegar just tastes thin.
In the kitchen
Shake it on hot chips the moment they leave the fryer, before they cool. Steam carries it into the potato.
