What it is
Salt has been made on the Blackwater since before the Domesday survey recorded pans there; the present works has boiled estuary water in open pans since 1882. The hollow pyramids form only at the surface of a slow, shallow boil — the shape is a consequence of the pan, not an additive.
In the kitchen
Crush it between thumb and finger over the plate — it is built to shatter, and dissolving it in a liquid wastes the texture and the money together. It weighs about half what fine salt does by volume, so a recipe's teaspoon of table salt is not a teaspoon of this.
