What it is
Macvin is the only French appellation whose mistelle is muted with marc — oak-aged pomace brandy — rather than with a wine brandy, and the name carries it: mac, for marc. Recognised in 1991, it is the youngest of the Jura appellations and the one that tastes least like wine, all pressed skins and warm spice.
In the kitchen
A spoonful stirred into a cream sauce off the heat gives a spice note no wine reduction produces; cook it hard and the marc turns to fusel. In the Jura it is poured over aged Comté, and the salt of the cheese is what makes the sweetness readable.
