What it is

Kobukuro means child bag, and in the horumon repertoire it is the offcut wanted for texture alone: lean, almost fatless, squeaking between the teeth like a fresh curd. The word horumon itself is said to come from Osaka slang for what gets thrown away, though the medical hormone is the likelier root.

In the kitchen

Grill it fast and hot — thirty seconds a side over live coals. Past a minute the snap turns to rubber and no sauce brings it back.
