What it is

The name has nothing to do with a duck: it comes from a Lushootseed word, gwiduq, generally read as dig deep, and the clam does exactly that, sinking about thirty centimetres in its first years and then staying put. The oldest one aged so far was one hundred and sixty-eight.

In the kitchen

Blanch the siphon ten seconds in boiling water, plunge it into ice, and the dark skin peels off in one piece like a sock. Slice the peeled siphon paper-thin across the grain for raw service; the softer mantle is a different meat and wants a fast sauté or a chowder.
