What it is
The boats trawl the flanks of the La Fonera canyon off Palamós between about four hundred and fifty and eight hundred metres, which is why almost nothing else comes up in the same haul. Since 2013 the fleet has run its own co-management plan — closures, effort caps and a mesh wider than European law requires — the first arrangement of its kind in the western Mediterranean.
In the kitchen
Twenty seconds a side on a plancha at full heat with nothing but coarse salt, off while the shell is still bright — a full minute turns the flesh to cotton. Suck the heads while they are hot: the juice in there is worth more than the tail.
