What it is

One of the first plants humans domesticated, and for most of history it was grown for linen rather than food — the Latin name means most useful. Dyed flax fibres found in a Georgian cave are thirty thousand years old.

In the kitchen

Whole seeds pass straight through you. Grind them just before use — ground flax goes rancid within days.
