What it is
The name may come from the thistle flower once used to curdle it, or from the flower carved into the base of the wooden moulds — the record does not settle it. What is fixed is the lamb rennet and the smoke: wheels hang a fortnight over a fire of Mediterranean scrub before they ever see a cellar.
In the kitchen
Its lipase bite is sharpest cold, so grate it but let the shavings sit ten minutes at room temperature before they meet a warm plate. It seizes rather than melts — keep it off pizza and on top of a fava purée.
