What it is
China domesticated the duck millennia ago and perfected its roasting into imperial ceremony. France answered with its own schools — rare Rouen duck, pressed at the table in silver contraptions, and the Southwest’s confit, where the bird is preserved in its own gold.

Score the fat, start it in a cold pan, and pour off the rendered fat as you go — then roast your next potatoes in it and understand the Southwest of France.
