What it is
Egypt eats it at breakfast as ful medames, simmered overnight in a narrow-necked pot, and the dish is older than the pyramids. In Sicily and Puglia it is boiled to a purée called macco and served with wild greens.
In the kitchen
Buy them already skinned if you can. Peeling a kilo of soaked dried favas by hand is an afternoon's work.
