What it is
Demerara is a river in what is now Guyana, and almost no demerara sugar has come from there for a long time - most of it is milled in Mauritius. The word survives as a crystal specification rather than an origin.
In the kitchen
Buy it for what the crystal does, not for molasses it barely has: scattered on a shortbread lid or a crumble it stays crunchy right through the oven. Creamed into a cake batter it simply dissolves, and you have paid extra for white sugar.
