What it is
The filling of maamoul and of the Iraqi kleicha, and one of the oldest sweeteners in use — Mesopotamian tablets record date syrup as a trade good four thousand years ago, long before cane sugar reached the region.
In the kitchen
Warm it with a spoonful of water and a little butter to make it spreadable. Cold it is unworkable.
