What it is
It comes from smallage, the wild ancestor of celery, and it is startlingly concentrated — a quarter-teaspoon carries more celery flavour than a whole stick. Ground with salt it becomes celery salt, which is the entire argument of a Bloody Mary.
In the kitchen
It turns bitter fast if you overdo it. Start with half what you think, especially in a coleslaw or a court-bouillon.
