What it is
The “queen of spices” grew in Indian rainforests, but Vikings met it in the markets of Constantinople and carried it north — which is why, a thousand years later, Scandinavia bakes with more cardamom per person than anywhere outside Asia.
In the kitchen
Crush the green pods to free the black seeds; grind those only. In coffee, a single crushed pod is a small journey.
