What it is
Stellatus means starry — the fish carries star-shaped bony plates along its flanks and a snout like a blade. It ripens in about seven years where beluga needs twenty, which once made it the cheapest of the Caspian three and now, with the wild stock collapsed, one of the hardest to find.
In the kitchen
Its grain is the smallest and most saline of the classic three, so it is the one to use when the caviar has to be tasted through something else — in a cream, a beurre blanc, on a warm blini. Never a metal spoon: bone, horn or nacre, or you taste the metal.
