Radishes standing upright in a malt and hazelnut soil, pulled up to eat. It showed the growing rather than the cooking, and a decade of vegetable-led menus followed.
Why it works
Roasted malt and hazelnut are bitter, which is what soil smells like. The radish is pulled up through them, so the bitterness arrives before its own pepper.
