Spherical olive

An olive taken apart and rebuilt as a thin membrane holding its own juice. Spherification, and with it the claim that technique could return something familiar to you as though you had never had it.

Why it works

Alginate sets only where it meets calcium, so the skin forms at the surface and stops there. The inside stays liquid because nothing has reached it.
