What it is
Bread rose for thousands of years before anyone knew why. Pasteur identified the organism in the 1850s, and only then did it become possible to buy the living thing in a packet rather than keeping a piece of yesterday's dough alive.
In the kitchen
Never let it touch salt directly in the bowl — salt kills it on contact. Put the flour between them.
