What it is
Real wasabi is a rhizome grown in cold running mountain streams, takes two years, and is one of the hardest crops in the world to farm. Almost everything served under the name outside Japan is horseradish, mustard and green dye.
In the kitchen
Grated fresh, it loses its heat within fifteen minutes. That is why it is grated at the counter in front of you and never in advance.
