What it is
Closed Japanese bloodlines bred for a century until the marbling threads through the muscle like frost on a window — graded to the strictest scale in meat, up to A5. The legends of beer rations and daily massages are mostly folklore; the miracle is genetics, and fat that melts below body temperature.
In the kitchen
Forget the steakhouse slab: cut thin, sear seconds on cast iron, salt only. A little goes far — this is meat to eat by the slice, like a great ham.
