What it is

The bunches are laid on straw or hung in an unheated loft for at least six weeks and pressed between Christmas and late February; a hundred kilos of shrivelled grapes yield fifteen to eighteen litres of must. Nothing is added at any point — the sweetness is only the water that left.

In the kitchen

Deglaze with it off the heat and reduce by half at most; boiled hard it caramelises and turns bitter. A tablespoon swirled into the fat left after searing foie gras is the entire sauce.
