What it is
The “king of fish” has convened parliaments: in Juvenal’s satire, a turbot too vast for any dish forced Emperor Domitian to summon the Roman Senate, which gravely advised building a pot around it. France still forges the turbotière, a diamond-shaped vessel that exists for this fish alone.
In the kitchen
Cook it on the bone, always — the gelatine bastes the pearl-white flesh from within. Butter and lemon complete the coronation; a morel cream is the state occasion.
