What it is
Not a pepper but a Himalayan cousin of Sichuan pepper, and it smells overwhelmingly of grapefruit — so much so that blind tasters routinely guess citrus zest. The numbing tingle is the family signature, milder here than in its Chinese relative.
In the kitchen
Grind it over the finished plate, never into the cooking. Heat destroys the citrus note within a minute.
