Rutabaga

What it is

A seventeenth-century accident — a cross between a cabbage and a turnip that happened in a Bohemian or Scandinavian garden and bred true. In France its name is still a byword for wartime hardship, which has done its reputation lasting damage.

In the kitchen

Mash it half and half with potato and a great deal of butter. Alone it is watery; the potato gives it body.
