What it is
The fifth most important cereal on Earth and almost unknown on European tables. Domesticated in Sudan some six thousand years ago, it will crop on rainfall that would kill maize, which is why half of Africa depends on it.
In the kitchen
The whole grains pop like tiny popcorn in a dry pan. It is the fastest way to see what it actually tastes of.
