What it is
Aged in the solera system, the same cascade of stacked barrels used for the wine: each cask is partly drawn off and topped up from the one above, so a bottle contains a blend of many years and no single vintage exists.
In the kitchen
It is strong enough to use by the teaspoon. A few drops finish a lentil soup or a gazpacho better than a whole lemon.
